From BillyBob's Still: Kahlua Liqueur

Always good, with Coffee in an Andy's Light mug.


4 cups sugar
4 cups water
1/2 cup instant coffee (not freeze dried)
1 qt Vodka
1 Vanilla bean, sliced diagonally several times

Boil sugar in water for 10 minutes. Add instant coffee. Remove from heat. Add Vodka and
Vanilla bean. Pour into bottles, let stand three weeks, turning bottles daily.

BillyBob's Pumkin Cream Cheese Pie

4oz. (1/2 of 8-oz. pkg.)Cream Cheese, softened
1 Tbsp. milk
1 Tbsp. sugar
1 tub (8 oz.) Whipped Topping, thawed, divided
1 Graham Pie Crust (6 oz.)
1 cup milk
1 can (15 oz.) pumpkin
2 pkg. (4-serving size each) Instant Pudding & Pie Filling
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves



MIX cream cheese, 1 Tbsp. milk and sugar in large bowl with wire whisk until well blended.
Gently stir in half of the whipped topping. Spread into crust.
POUR 1 cup milk into large bowl. Add pumpkin, pudding mixes and spices. Beat with wire whisk 2 minutes or until well blended. (Mixture will be thick.) Spread over cream cheese layer.
REFRIGERATE 4 hours or until set. Garnish with remaining whipped topping. Store leftover pie in refrigerator.

Lynchburg Two Dozen Big Soft Pretzels

Big Soft Pretzels

1-1/4 cups warm water
1 package (1 scant tablespoon) dry active yeast
2 teaspoons sugar 3-1/2 to 4 cups flour
1-1/2 teaspoons salt 2 tablespoons oil
1 egg beaten with 1 tablespoon milk for glaze coarse salt for topping

Place 1/4 cup water in a large bowl and sprinkle with yeast and sugar.

Stir to dissolve and let yeast proof until bubbly, about 5 to 10 minutes.

Add remaining cup water, 31/2 cups of the flour, salt, and oil; stir to combine well.

Turn dough out onto a lightly floured board and knead until smooth and elastic, adding the remaining 1/2 cup of flour as needed to prevent sticking.

Lightly grease 2 heavy baking sheets with shortening. Divide dough into 24 pieces and roll each into a thin strip about 10 inches long.

Shape into pretzels and place on prepared baking sheets.

Cover pretzels loosely with towels and let them rest in a warm place until puffy, about 15 minutes.

Lightly brush egg-milk glaze over the pretzels and sprinkle with salt.

Bake at 425 degrees F for about 15 to 20 minutes, until lightly colored.

Lynchburg Scratch Flour Tortillas

Ingredients:

2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon shortening
1/2 cup water

Method:

1. In a large mixing bowl, combine together flour, salt and baking powder. Cut in shortening until mixture resembles coarse cornmeal.

2. Add the water and mix until the dough can be gathered together. If necessary, add more water (1 teaspoon at a time) until the dough comes together. Cover the dough with a damp cloth and let rest for 15 minutes.

3. Divide the dough into 12 equal pieces and roll into rounds. On a lightly floured surface, use a rolling pin to flatten and stretch each round into a circle 7 inches across.4. Cook on an ungreased skillet over medium high heat until brown spots begin to appear on the tortillas. Keep covered with a clean, dry towel until ready to serve.

Lynchburg Fried Rice

Ingredients:
soy sauce
white rice
cabbage
frozen peas
onions
optional: any meat scraps any vegitables mushrooms be creative with fridge left overs.

Method:
In a two quart sauce pan place about a half inch of rice on the bottom of the pan. Add water to the first nuckle of your forefinger above the level of the rice {this works for any quanity of rice by the way}. Add about a table spoon of butter, cover and bring to a boil reduce heat to a slow simmer. When the water is absorbed the rice is done. Then set aside. cut bacon in small slices, slice cabbage thinly, and cut the other ingredients creatively. If you are adding meat scraps cut into small pieces. Raw meat should be sliced accross the grain. Fry the bacon first then add the foods in the order that takes the longest to get done. Last step is to stir in the rice. Add soy sauce to taste while cooking.

Any combinations of meats and vegitables can be added, good way to dispose of those pesky left overs.
